This salmon & brinjal curry is a really easy and tasty dish that is sure to stir up your taste buds. Perfect for a mid week dinner meal.

Ingredients
6 medium tomatoes, grated
1 onion, peeled and diced
6 garlic cloves, peeled and chopped
1 green chilli, chopped
8 baby brinjals, cut in half
Tamarind paste mixed in water
8 curry leaves
6 portions filleted salmon
Salt and black pepper, to taste
1 tsp sugar (5 ml)
3 tbsp sunflower oil (45 ml)
1 tsp braising spice or dry biryani mix spice
(5 ml)
1 tsp turmeric (5 ml)
4 tsp chilli powder (20 ml)
Fresh coriander, chopped
Method
- In a bowl, mix tomatoes, onion, garlic, chillies, brinjals, tamarind paste and curry leaves.
- Season salmon with salt, pepper and sugar.
- In medium pot, heat oil and add braising spice or biryani mix spice, turmeric and chilli powder.
- Add tomato mixture and simmer for 15 minutes or until brinjals have softened.
- Add salmon and cook for 20 minutes.
- Garnish with coriander and serve with rice and salad.
