Make this quick and easy penne with a creamy chorizo mushroom sauce dish on days when you need a big bowl of comfort.

Ingredients
300 g penne pasta
3 tbsp olive oil (45 ml)
1 large chorizo sausage, sliced
1 red onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
300 g portabellini mushrooms
¼ cup dry white wine (65 ml)
¼ cup fresh basil, chopped (65 ml)
Salt and freshly ground black pepper
Method
- In a large pot, boil water and cook penne as per instructions on packet.
- In a frying pan, heat oil and shallow fry sausage until crisp; remove and keep warm.
- Add onions and garlic to pan; fry until onions are soft.
- If mushrooms are large, cut them in half and add to the onion mixture with wine and cook for 8 to 10 minutes.
- Stir occasionally until mushrooms are tender.
- Add penne and basil to the mixture.
- Season with salt and pepper, and spoon into a dish.
- Serve hot.
