These deep-fried prawns are juicy on the inside and super crispy on the outside. It is a perfect snack to make for gatherings.

Ingredients
3 tbsp flour (45 ml)
1 tsp cayenne pepper (5 ml)
1 tsp salt (5 ml)
1 tsp chilli flakes (5 ml)
800 g prawn tails,
peeled and deveined
2 extra large eggs, beaten
3 cups dry breadcrumbs (330 g)
Sunflower oil for deep-frying
For the Tartare Sauce:
1 cup mayonnaise (250 ml)
½ cup chopped gherkins (125 ml)
1 small onion, peeled
and finely chopped
1 tbsp tomato sauce (15 ml)
1 tbsp sandwich spread (15 ml)
Lemon wedges
Method
- In a small bowl, mix flour, cayenne pepper, salt and chilli flakes together.
- Dust prawn tails with seasoned flour, dip in egg and roll in breadcrumbs.
- Refrigerate for 20 minutes to set.
- In a frying pan, heat oil and fry prawns in batches until golden brown.
- Remove and drain excess oil on kitchen paper towel.
- Serve with Tartare Sauce and lemon wedges.
For the Tartare Sauce:
- In a small bowl, mix all the ingredients well, except for the lemon wedges, and serve with prawns.
