This is an easy recipe for roast potato curry. It is simple, wholesome and comforting. A side dish that will be loved by everyone!

Ingredients
1 tbsp sunflower oil (15 ml)
1 small onion, peeled and diced
½ tsp cumin (3 ml)
½ tsp mustard seeds (3 ml)
1 tsp turmeric (5 ml)
1 red chilli, chopped
1 small tomato, peeled and grated
4 medium potatoes, peeled &
cut into chunks
6 curry leaves
1 cup water (250 ml)
Salt and pepper, to taste
Fresh coriander, to garnish
Method
- Heat oil in a medium pot.
- Sauté onions, cumin and mustard seeds until dried and mixture begins to splutter.
- Stir in turmeric, chilli and tomato; cook for 1 minute.
- Add potatoes, curry leaves and water, and season with salt and pepper.
- Bring to a boil.
- Cook for 5 minutes and turn heat down to medium.
- Simmer gently for 15 minutes until water has reduced and potatoes are soft.
- Garnish with coriander and serve.
