These glazed carrots with bacon are so flavourful and easy to make! This side dish would be a delicious addition to your dinner table.

Serves: 4 people

Ingredients

500 g baby carrots
5 slices streaky bacon
1 onion, peeled and chopped
3 tbsp brown sugar (45 ml)
½ tsp freshly ground black pepper (3 ml)
3 tbsp fresh parsley, chopped (45 ml)

Method

  1. In a pot, boil carrots for 15 minutes or until tender.
  2. Drain and set aside.
  3. In a pan, fry bacon until crispy, drain on kitchen paper towel, reserving 1 tablespoon of drippings in the pan.
  4. Crumble bacon and set aside.
  5. Sauté onions in the bacon drippings until transparent.
  6. Stir in brown sugar, pepper and carrots; cook for 5 minutes, stirring frequently, until heated through and glazed.
  7. Place in a serving bowl, sprinkle with bacon and garnish with parsley.
