If you like liver, you will love this pumpkin pap with liver & onion. It’s an easy and delicious meal to enjoy with the family!

Serves: 4 people
Ingredients
For Pumpkin Pap:
1 cup water (250 ml)
1 tsp salt (5 ml)
2 tsp sugar (10 ml)
250 g pumpkin, peeled and diced
2 tbsp butter (30 ml)
1 tsp cinnamon (5 ml)
2 cups boiling water (500 ml)
1 cup super maize meal (250 ml)
For Fried Liver:
2 tbsp oil (30ml)
1 red onion, peeled and sliced
2 cloves garlic, peeled and crushed
2 lamb’s liver steaks or pieces
Salt, to taste
½ tsp cayenne pepper (3 ml)
Method
For the Pumpkin Pap:
- In a medium saucepan, bring water to a boil, add salt, sugar and pumpkin; cook 15 minutes or until pumpkin is soft.
- Add 1 tablespoon butter and the cinnamon.
- Mash pumpkin until smooth.
- Add boiling water to pumpkin, pour in maize meal.
- Stir continuously with wooden spoon until well mixed and smooth.
- Cook pap for 10 minutes; stir in remaining butter.
- Serve with fried liver, onions and tomato relish.
For the Fried Liver:
- In a pan, heat oil, fry onions and garlic until soft; remove and keep warm.
- Season liver with salt and cayenne pepper; fry in same pan for 5 minutes on each side.
- If necessary, add oil to pan while frying.
