Serves: 4 people

Ingredients

For Pumpkin Pap:
1 cup water (250 ml)
1 tsp salt (5 ml)
2 tsp sugar (10 ml)
250 g pumpkin, peeled and diced
2 tbsp butter (30 ml)
1 tsp cinnamon (5 ml)
2 cups boiling water (500 ml)
1 cup super maize meal (250 ml)


For Fried Liver:
2 tbsp oil (30ml)
1 red onion, peeled and sliced
2 cloves garlic, peeled and crushed
2 lamb’s liver steaks or pieces
Salt, to taste
½ tsp cayenne pepper (3 ml)

Method

For the Pumpkin Pap:

  1. In a medium saucepan, bring water to a boil, add salt, sugar and pumpkin; cook 15 minutes or until pumpkin is soft.
  2. Add 1 tablespoon butter and the cinnamon.
  3. Mash pumpkin until smooth.
  4. Add boiling water to pumpkin, pour in maize meal.
  5. Stir continuously with wooden spoon until well mixed and smooth.
  6. Cook pap for 10 minutes; stir in remaining butter.
  7. Serve with fried liver, onions and tomato relish.

For the Fried Liver:

  1. In a pan, heat oil, fry onions and garlic until soft; remove and keep warm.
  2. Season liver with salt and cayenne pepper; fry in same pan for 5 minutes on each side.
  3. If necessary, add oil to pan while frying.
