Ingredients
3 tbsp oil (45 ml)
1 onion, peeled and chopped
½ green pepper, finely diced
4 large eggs, beaten
4 tbsp milk (60 ml)
1 can shredded tuna, drained (170 g)
½ can cream style sweet corn (205 g)
1/3 cup feta cheese, crumbled (80 ml)
Salt and freshly ground black pepper,
to taste
Method
- Preheat oven to 200°C.
- Grease 9 cups of a standard muffin tray with non-stick cooking spray.
- In a medium saucepan, heat oil and fry onions and peppers until onions are transparent.
- Transfer to a bowl to cool.
- Add remaining ingredients to onion mixture; season to taste.
- Divide the mixture among the 9 cups.
- Bake for 20 to 25 minutes until golden and set.
