Try this prawns in coconut cream and rest assured, it would soon become a favourite that you would regularly make.

Ingredients
2 tbsp butter (30 ml)
1 small onion, peeled and finely chopped
1 tbsp crushed garlic (15 ml)
½ cup coconut cream (125 ml)
1 tsp brown sugar (5 ml)
1 tsp lemon juice (5 ml)
Salt and white pepper, to taste
8 large prawns, peeled and deveined
Method
- In a medium-sized saucepan, melt butter and sauté onions and garlic.
- Add coconut cream, sugar and lemon juice, and season with salt and pepper.
- Cook for 5 minutes.
- Add prawns and cook over medium heat for 15 minutes or until prawns have cooked through.
- Serve with rice.
