This meatballs in pepper sauce is a heart-warming dish that’s super easy to make and brings so much flavour to the table.

Ingredients
1 cup breadcrumbs (250 ml)
¼ cup milk (65 ml)
500 g minced beef
1 small onion, peeled and chopped
2 tbsp fresh parsley, chopped (30 ml)
1 tsp dried mixed herbs (5 ml)
1 egg, lightly beaten
2 tbsp oil (30 ml)
For the Pepper Sauce:
1 tbsp oil (15 ml)
1 small onion, peeled and chopped
1 of each red and green peppers, chopped
1 tsp cayenne pepper (5 ml)
1/3 cup tomato paste (80 ml)
1 tsp beef stock powder or 1 cube (5 ml)
1 cup water (250 ml)
Method
- In a bowl, combine breadcrumbs and milk; let stand for 5 minutes. In another bowl, mix breadcrumb mixture with mince, onions, herbs and egg.
- Shape level tablespoons of mince mixture into balls.
- In a frying pan, heat oil, fry meatballs until browned and drain on absorbent paper.
- Transfer meatballs into a shallow ovenproof dish and top with pepper sauce.
- Bake covered in moderate oven for about 30 minutes or until cooked.
- Serve on top of mashed potatoes.
For the Pepper Sauce:
- In a pan, heat oil; stir-fry onions and peppers until onions are soft.
- Stir in cayenne pepper, tomato paste, stock and water; cook over medium heat until well combined.
