This meatballs in pepper sauce is a heart-warming dish that’s super easy to make and brings so much flavour to the table.

Serves: 4 people

Ingredients

1 cup breadcrumbs (250 ml)
¼ cup milk (65 ml)
500 g minced beef
1 small onion, peeled and chopped
2 tbsp fresh parsley, chopped (30 ml)
1 tsp dried mixed herbs (5 ml)
1 egg, lightly beaten
2 tbsp oil (30 ml)
For the Pepper Sauce:
1 tbsp oil (15 ml)
1 small onion, peeled and chopped
1 of each red and green peppers, chopped
1 tsp cayenne pepper (5 ml)
1/3 cup tomato paste (80 ml)
1 tsp beef stock powder or 1 cube (5 ml)
1 cup water (250 ml)

Method

  1. In a bowl, combine breadcrumbs and milk; let stand for 5 minutes. In another bowl, mix breadcrumb mixture with mince, onions, herbs and egg.
  2. Shape level tablespoons of mince mixture into balls.
  3. In a frying pan, heat oil, fry meatballs until browned and drain on absorbent paper.
  4. Transfer meatballs into a shallow ovenproof dish and top with pepper sauce.
  5. Bake covered in moderate oven for about 30 minutes or until cooked.
  6. Serve on top of mashed potatoes.

For the Pepper Sauce:

  1. In a pan, heat oil; stir-fry onions and peppers until onions are soft.
  2. Stir in cayenne pepper, tomato paste, stock and water; cook over medium heat until well combined.
