This lamb chops in tomato chutney is spicy, satisfying and so delicious that it will have you going back for more!

Serves: 4 people

Ingredients

8 lamb chops
1 tsp barbeque spice (5 ml)
Salt and freshly ground black pepper
4 tbsp cooking oil (60 ml)
1 large onion, peeled and chopped
1 tsp mild meat masala (5 ml)
1 can diced tomatoes (410 g)
1 green chilli, chopped

Method

  1. Rub lamb chops with barbeque spice, salt and pepper.
  2. In a large frying pan, heat half the oil and fry chops until browned and cooked; set aside and keep warm.
  3. Add remaining oil to pan, sauté onions with masala until soft.
  4. Add tomatoes and chillies; stir gently over low heat.
  5. Cover pan and cook for 15 minutes.
  6. Arrange chops on a serving platter and cover with tomato chutney.
  7. Serve hot.
