Creamy chicken & leek stew on pasta is a delicious, simple and quick healthy meal that the family will enjoy.

Ingredients
¼ cup sunflower oil (65 ml)
8 pieces of chicken,
thighs and drumsticks
4 leeks, cleaned and sliced
2 cloves garlic, peeled and crushed
1 tsp turmeric (5 ml)
1 punnet mushrooms, sliced (250 g)
Salt, to taste
2 tsp lemon pepper (10 ml)
1 cup chicken stock (250 ml)
1 cup cream (250 ml)
¼ cup fresh coriander leaves,
chopped (65 ml)
300 g cooked tagliatelle pasta
Method
- In a large saucepan, heat oil and fry chicken until golden.
- Remove from pan and keep warm.
- Add leeks, garlic and turmeric; cook until transparent.
- Add mushrooms, salt and lemon pepper; cook for 5 minutes.
- Return chicken to saucepan, add stock and cream; cover pan and simmer gently for 45 minutes.
- Add coriander and heat through.
- To cook pasta, follow the instructions on the packet.
- Spoon pasta into a large serving dish, top with chicken and serve
