Ingredients
2.5 kg beef roast
¼ cup olive oil (65 ml)
2 tbsp chutney (30 ml)
2 tsp dry mixed herbs (10 ml)
2 tbsp soya sauce (30 ml)
4 tbsp sweet chilli sauce (60 ml)
2 tbsp barbeque spice (30 ml)
Salt and freshly ground black pepper
2 tsp Cajun spice (10 ml)
Handful of fresh rosemary, chopped
Method
- Preheat oven to 180°C.
- Place beef in a large roaster.
- In a small bowl, mix remaining ingredients to make marinade.
- Rub over beef and cover completely.
- Roast beef in oven for 45 to 60 minutes.
- Let roasted beef rest for at least 30 minutes before slicing into thin slices.
- Serve with roasted potatoes and seasonal veggies.
