Cook this perfect roast beef for Sunday lunch or a dinner party. This recipe will help you achieve a tender and juicy roast.

Serves: 8 people

Ingredients

2.5 kg beef roast
¼ cup olive oil (65 ml)
2 tbsp chutney (30 ml)
2 tsp dry mixed herbs (10 ml)
2 tbsp soya sauce (30 ml)
4 tbsp sweet chilli sauce (60 ml)
2 tbsp barbeque spice (30 ml)
Salt and freshly ground black pepper
2 tsp Cajun spice (10 ml)
Handful of fresh rosemary, chopped

Method

  1. Preheat oven to 180°C.
  2. Place beef in a large roaster.
  3. In a small bowl, mix remaining ingredients to make marinade.
  4. Rub over beef and cover completely.
  5. Roast beef in oven for 45 to 60 minutes.
  6. Let roasted beef rest for at least 30 minutes before slicing into thin slices.
  7. Serve with roasted potatoes and seasonal veggies.
