Ingredients
3 tbsp oil (45 ml)
8 pork sausages
1 red onion, cut into thick wedges
2 cloves garlic, peeled and crushed
1/3 cup chutney (80 ml)
¼ cup fresh coriander leaves,
chopped (65 ml)
Method
- In a large frying pan, heat oil, fry sausages for 7 to 8 minutes; keep turning until brown and cooked through.
- Add onions, stirring occasionally; cook for 3 minutes until they start to soften.
- Stir in garlic, chutney and coriander.
- Simmer uncovered for 3 minutes or until sauce thickens and coats sausages.
- Serve sausage mixture on top of mashed potatoes and add your favourite green veggie to the dish.
