This pea and mint soup recipe is easy and delightful to make. Simple, delicious flavors to be enjoyed with the family.

Ingredients
2 tbsp butter or margarine (30 ml)
1 cup spring onions, coarsely chopped (250 ml)
3½ cups frozen green peas (500 g)
3 cups chicken stock (750 ml)
2 cups water (500 ml)
1 tbsp lemon juice (15 ml)
Salt and freshly ground black pepper
1 tbsp olive oil (15 ml)
2 tbsp fresh mint, thinly sliced (30 ml)
100 g store-bought croutons
Method
- In a large saucepan, melt butter over medium heat and fry onions until soft.
- Add peas, stock and water; bring to a boil, reduce heat and simmer for 10 minutes or until peas are tender.
- Remove from heat, let it rest for 15 minutes; stir in lemon juice, salt and pepper.
- Blitz half of pea mixture in blender until smooth.
- Pour pureed mixture into a large saucepan.
- Repeat previous step with remaining pea mixture.
- Heat through for 10 minutes.
- Alternatively, mash peas lightly and rub through a sieve in batches.
- Ladle soup into bowls; drizzle with ½ teaspoon olive oil, topped with mint and croutons.
