This delicious maple syrup & pecan nut steamed pudding is very easy to make and it is the perfect family dessert.

Ingredients
200 g butter or margarine
1 cup sugar (200 g)
4 eggs, lightly beaten
1 tsp vanilla essence (5 ml)
2 cups self-raising flour (250 g)
1 cup pecan nuts, chopped (125 g)
1 tsp ground cinnamon (5 ml)
1 lemon rind, grated
1 cup milk (250 ml)
½ cup maple syrup (125 ml)
Icing sugar, for dusting
Ice cream or whipped cream, for serving
Method
- In a bowl, beat the butter/margarine and sugar together until creamy.
- Gradually beat in eggs and add vanilla essence.
- Combine flour, nuts, cinnamon and lemon rind; fold in while alternating with milk, until the mixture is smooth.
- Reserve half the syrup and pour the rest into a 2-litre greased ovenproof bowl.
- Fill bowl with mixture and pour remaining syrup on top.
- Pour boiling water into a large saucepan.
- Immerse the pudding bowl in the water, making sure the water reaches halfway up the sides of the bowl.
- Cover saucepan and steam gently for 1½ hours over a medium heat.
- Check regularly that pan doesn’t boil dry.
- Insert a skewer in the pudding centre; if it comes out clean, the pudding has cooked through.
- Turn pudding out onto a large serving plate, dust with icing sugar and serve with ice cream or whipped cream.
