This easy lamb & bean stew will warm, comfort and fill you up. Enjoy this hearty meal with the whole family!

Serves: 4 people
Ingredients
3 tbsp sunflower oil (45 ml)
1 onion, peeled and sliced
2 cloves garlic, peeled and crushed
1 tbsp garam masala (15 ml)
500 g neck of lamb
1 can diced tomatoes (410 g)
2 carrots, peeled and sliced
2 medium baby marrows, sliced
Salt and cayenne pepper, to taste
1 can butter beans, drained (410 g)
Method
- In a large heavy based saucepan, heat oil and fry onions, garlic and garam masala until onions are soft.
- Add neck of lamb and stir to coat lamb with masala.
- Cook for 6 minutes, stirring occasionally, until lamb has browned on all sides.
- Add tomatoes, carrots and marrows; add salt and cayenne pepper.
- Bring to a boil, stirring frequently.
- Cover pan with lid, reduce heat and simmer for 1 hour, stirring occasionally.
- Stir in beans, cover pot, simmer for 15 to 20 minutes or until lamb is tender.
- Serve with samp or rice.
