This easy lamb & bean stew will warm, comfort and fill you up. Enjoy this hearty meal with the whole family!

Serves: 4 people

Ingredients

3 tbsp sunflower oil (45 ml)
1 onion, peeled and sliced
2 cloves garlic, peeled and crushed
1 tbsp garam masala (15 ml)
500 g neck of lamb
1 can diced tomatoes (410 g)
2 carrots, peeled and sliced
2 medium baby marrows, sliced
Salt and cayenne pepper, to taste
1 can butter beans, drained (410 g)

Method

  1. In a large heavy based saucepan, heat oil and fry onions, garlic and garam masala until onions are soft.
  2. Add neck of lamb and stir to coat lamb with masala.
  3. Cook for 6 minutes, stirring occasionally, until lamb has browned on all sides.
  4. Add tomatoes, carrots and marrows; add salt and cayenne pepper.
  5. Bring to a boil, stirring frequently.
  6. Cover pan with lid, reduce heat and simmer for 1 hour, stirring occasionally.
  7. Stir in beans, cover pot, simmer for 15 to 20 minutes or until lamb is tender.
  8. Serve with samp or rice.
