This ginger beer is a sweetened and carbonated, non-alcoholic beverage. It is prepared with ginger, tartaric acid and sugar.

Serves: 5 Litre

Ingredients

20 cups of water (5 l)
4 cups of sugar (800 g)
4 tbsp ground ginger (60 ml)
1 tsp tartaric acid (5 ml)
1 tsp cream of tartar (5 ml)
½ cup seedless raisins (75 g)

Method

  1. To make syrup, bring 2½ litres of water and sugar to a boil in a large pot.
  2. The sugar should dissolve in about 15 minutes.
  3. Add ginger and simmer gently for 30 minutes.
  4. Remove pot from heat, add tartaric acid and cream of tartar, and stir to mix.
  5. Add remaining water and raisins, and let ginger beer stand for 24 hours to mature
