This ginger beer is a sweetened and carbonated, non-alcoholic beverage. It is prepared with ginger, tartaric acid and sugar.

Ingredients
20 cups of water (5 l)
4 cups of sugar (800 g)
4 tbsp ground ginger (60 ml)
1 tsp tartaric acid (5 ml)
1 tsp cream of tartar (5 ml)
½ cup seedless raisins (75 g)
Method
- To make syrup, bring 2½ litres of water and sugar to a boil in a large pot.
- The sugar should dissolve in about 15 minutes.
- Add ginger and simmer gently for 30 minutes.
- Remove pot from heat, add tartaric acid and cream of tartar, and stir to mix.
- Add remaining water and raisins, and let ginger beer stand for 24 hours to mature
