This recipe for exotic braaied snoek is a real South African classic and is perfect for summer entertaining.

Ingredients
1 tbsp soya sauce (15 ml)
1 tbsp apricot jam (15 ml)
1 tbsp crushed pineapple (15 ml)
A few slices of fresh or canned peaches,
finely diced
1 tbsp olive oil (15 ml)
1 tsp ground cumin (5 ml)
½ tsp crushed coriander seeds (3 ml)
4 tbsp chutney (60 ml)
4 tbsp tomato paste (60 ml, optional)
Salt and freshly ground black pepper
1 kg fresh snoek, head removed and
butterflied with skin still on
Lemon wedges, to serve
Method
- Make a fire and burn coals until they give off a medium heat.
- In a large bowl, mix together all ingredients, except the snoek.
- Brush mixture onto snoek and marinate for 30 minutes.
- Brush a shallow roaster with some olive oil and place fish skin-side down in roaster.
- Roast over medium coals and braai for 20 to 25 minutes.
- Serve snoek with lemon wedges.
