This chicken, potato & bacon bake meal is a full, balanced meal that’s not only delicious but packed with protein!

Serves: 4 people
Ingredients
6 potatoes, finely sliced
6 skinless chicken thighs
6 skinless chicken drumsticks
1 pkt bacon, diced (250 g)
1 onion, finely diced
4 carrots, thickly sliced
1 tsp dried thyme (5 ml)
1 tsp dried rosemary (5 ml)
2 bay leaves
Salt and pepper, to taste
¾ cup chicken stock (180 ml)
1 tbsp cornflour (15 ml)
Method
- Preheat oven to 170°C.
- Using an ovenproof dish or small roaster, layer half of potatoes at the bottom and top with chicken.
- Sprinkle with bacon, onion and carrots.
- Add thyme, rosemary, bay leaves, salt and pepper.
- Add stock and cornflour, layer remaining potatoes, add salt and pepper.
- Cover roaster with lid and cook for 1 hour in oven.
- Remove lid and cook for 30 minutes more until potatoes are golden.
