This is an easy bananas in puff pastry recipe everyone will love. They are crispy on the outside, soft on the inside and very delicious.

Serves: 6 people

Ingredients

3 ripe bananas
1 pkt frozen puff pastry, thawed (400 g)
¼ cup brown sugar (65 ml)
Oil for deep-frying
Caster sugar, to serve
Custard or vanilla ice cream, to serve

Method

  1. Peel and halve bananas.
  2. Cut those pieces in half again, lengthwise, to get 4 equal-sized pieces.
  3. On a flat surface, gently roll out puff pastry.
  4. Using a sharp knife, cut pastry into 12 equal-sized pieces to fit banana slices.
  5. Sprinkle each pastry with a bit of brown sugar.
  6. Wrap banana pieces with pastry, folding ends in and pressing edges with a fork to seal.
  7. Place the wrapped banana pieces in a single layer on a tray and chill for 30 minutes in the fridge.
  8. In a large pan, heat oil and deep-fry pastries for 5 minutes until golden and cooked through.
  9. Maintain a medium to hot temperature; if oil is too hot the pastries will brown too quickly and not cook through completely.
  10. Remove pastries from oil and drain on kitchen paper towel.
  11. Sprinkle with caster sugar and serve with custard or vanilla ice cream.
