This is an easy bananas in puff pastry recipe everyone will love. They are crispy on the outside, soft on the inside and very delicious.

Ingredients
3 ripe bananas
1 pkt frozen puff pastry, thawed (400 g)
¼ cup brown sugar (65 ml)
Oil for deep-frying
Caster sugar, to serve
Custard or vanilla ice cream, to serve
Method
- Peel and halve bananas.
- Cut those pieces in half again, lengthwise, to get 4 equal-sized pieces.
- On a flat surface, gently roll out puff pastry.
- Using a sharp knife, cut pastry into 12 equal-sized pieces to fit banana slices.
- Sprinkle each pastry with a bit of brown sugar.
- Wrap banana pieces with pastry, folding ends in and pressing edges with a fork to seal.
- Place the wrapped banana pieces in a single layer on a tray and chill for 30 minutes in the fridge.
- In a large pan, heat oil and deep-fry pastries for 5 minutes until golden and cooked through.
- Maintain a medium to hot temperature; if oil is too hot the pastries will brown too quickly and not cook through completely.
- Remove pastries from oil and drain on kitchen paper towel.
- Sprinkle with caster sugar and serve with custard or vanilla ice cream.
